Preparation Steps
Make the Dough
In a large bowl, combine the flour, yeast, sugar, and salt. In a small saucepan, heat the milk until warm (not boiling). Add the warm milk and eggs into the flour mixture and knead until a smooth dough forms. Cover and let it rise for about 1 hour.
Prepare the Butter
While the dough is rising, place the unsalted butter between two sheets of parchment paper and pound it into a flat rectangle about 1/2 inch thick. Refrigerate until firm.
Create Layers
Fold the dough into thirds like a letter. Roll out again and repeat this process 2 more times to create layers.
Shape the Croissants
Roll the dough into a large rectangle one last time. Cut into triangles and place a tablespoon of chocolate filling at the base of each triangle. Roll up from the base to the tip.
Second Rise
Place the shaped croissants on a baking sheet lined with parchment paper. Cover and let them rise for another 30 minutes.
Bake
Preheat the oven to 375°F (190°C). Brush the croissants with egg wash (beaten egg) and bake for 15-20 minutes or until golden brown.
