Roast the Poblano Peppers

Preheat your oven to 450°F (232°C). Place the poblano peppers on a baking sheet and roast them in the oven for about 15-20 minutes, turning occasionally until the skin is charred. Remove from the oven and let them cool before peeling off the skin.

Prepare the Chicken Mixture

In a large bowl, combine ground chicken, minced garlic, chopped cilantro, breadcrumbs, egg, salt, and black pepper. Mix until well combined.

Form the Patties

Divide the chicken mixture into 4 equal portions and form each portion into a patty.

Cook the Patties

In a skillet, heat olive oil over medium heat. Cook the chicken patties for about 5-6 minutes per side or until fully cooked and they reach an internal temperature of 165°F (74°C).

Prepare the Roasted Poblano Sauce

Peel and seed the cooled poblano peppers and blend them in a food processor until smooth. You can add a little olive oil, salt, and lime juice to taste.

Assemble the Burgers

Toast the burger buns if desired. Place a cooked chicken patty on each bun, top with roasted poblano sauce, lettuce, and tomato slices. Close the burger with the top bun.
