Vanilla Ice Cream

Method

Instructions

  1. 1

    Prepare Cream Mixture

In a medium saucepan, combine heavy cream, whole milk, granulated sugar, and salt. Heat over medium heat until the mixture is warm, stirring occasionally to dissolve the sugar.

  2. 2

    Whisk Egg Yolks

In a separate bowl, whisk the egg yolks until they are pale and slightly thickened. Gradually add a cup of the warm cream mixture to the yolks, whisking continuously to temper the eggs.

  3. 3

    Combine Mixtures

Pour the egg yolk mixture back into the saucepan with the cream mixture. Cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 5-7 minutes).

  4. 4

    Add Vanilla Extract

Remove the saucepan from heat and stir in the premium vanilla extract. Allow the mixture to cool to room temperature.

  5. 5

    Chill and Churn

Once cooled, transfer the mixture to the refrigerator and chill for at least 4 hours or overnight. Then, churn the mixture in an ice cream maker according to the manufacturer's instructions.

  6. 6

    Freeze

Transfer the churned ice cream to an airtight container and freeze for at least 4 hours before serving.
