    Prepare the Strawberry Mixture

    If using fresh strawberries, wash and hull them, then chop them into small pieces. If using frozen strawberries, thaw them and chop. In a small saucepan over medium heat, combine the strawberries with 1 tablespoon of sugar and cook until they are soft and syrupy, about 5 minutes. Let cool.

    Make the Cheesecake Base

    In a large mixing bowl, beat the cream cheese with the remaining sugar until smooth. Add the heavy cream, whole milk, vanilla extract, and a pinch of salt. Mix until well combined and creamy.

    Combine the Mixtures

    Gently fold the cooled strawberry mixture into the cheesecake base until just combined. You can leave some small chunks of strawberries for texture.

    Chill the Mixture

    Cover the mixture and refrigerate for at least 2 hours or until it is completely cold.

    Churn the Ice Cream

    Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

    Add Graham Cracker Crumbs

    In the last few minutes of churning, add in the graham cracker crumbs to incorporate them into the ice cream.

    Freeze the Ice Cream

    Transfer the ice cream to a lidded container and freeze for at least 4 hours, or until firm.
