Prepare the Coffee Mixture
In a mixing bowl, combine heavy cream, whole milk, granulated sugar, instant coffee granules, vanilla extract, and a pinch of salt. Whisk until the sugar and coffee are fully dissolved.

Chill the Mixture
Cover the bowl with plastic wrap and refrigerate for at least 2 hours or until the mixture is thoroughly chilled.

Churn the Ice Cream
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Add Chocolate Chips
During the last few minutes of churning, add in chocolate chips to the ice cream base, allowing them to mix evenly.

Freeze the Ice Cream
Transfer the ice cream to an airtight container and freeze for at least 4 hours to firm up before serving.
