Marinate the Chicken
In a bowl, combine the buttermilk, salt, paprika, garlic powder, onion powder, and black pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, preferably overnight.

Prepare the Coating
In a separate bowl, mix the all-purpose flour with a pinch of salt and pepper. Set aside.

Fry the Chicken
Heat the vegetable oil in a deep pan over medium heat. Remove the chicken from the buttermilk marinade, allowing excess to drip off, then coat in the flour mixture. Fry the chicken in batches until golden brown and cooked through, about 6-8 minutes per side. Drain on paper towels.

Toast the Buns
While the chicken is frying, toast the burger buns on a skillet or in an oven until golden.

Assemble the Sandwich
Spread mayonnaise on the bottom half of each bun. Place a fried chicken thigh on top, followed by pickles and a lettuce leaf. Top with the other half of the bun.
