Fries and Brussels Sprouts

Method

Preparation and Cooking

  1. 1

    Prepare the Potatoes

Wash and cut the russet and sweet potatoes into thin strips. Soak them in cold water for at least 30 minutes to remove excess starch.

  2. 2

    Prepare the Brussels Sprouts

Trim the Brussels sprouts and cut them in half. Toss them in a bowl with olive oil, salt, and pepper.

  3. 3

    Fry the Brussels Sprouts

In a deep pan, heat oil over medium heat. Fry the Brussels sprouts until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

  4. 4

    Bake the Fries

Preheat the oven to 425°F (220°C). Drain the soaked potatoes and pat them dry. Toss them with olive oil, salt, paprika, garlic powder, and black pepper. Spread them in a single layer on a baking sheet and bake for 25-30 minutes, flipping halfway through, until crispy.

  5. 5

    Fry the Sweet Potato Fries

In a separate pan, heat oil over medium heat. Fry the sweet potato strips until crispy and golden, about 4-6 minutes. Remove and drain on paper towels.

  6. 6

    Serve

Arrange the classic fries, sweet potato fries, and fried Brussels sprouts on a platter. Sprinkle with Parmesan cheese and serve with your choice of dipping sauce.
