Prepare the Mixture
In a large mixing bowl, combine the pork sausage, sauerkraut, cream cheese, beaten egg, salt, and black pepper. Mix until well combined.

Form the Balls
Using your hands, form the mixture into small balls, about 1 inch in diameter.

Coat the Balls
Roll each ball in breadcrumbs to coat evenly and set aside.

Heat the Oil
In a large skillet or deep fryer, heat the oil over medium-high heat until hot.

Fry the Balls
Carefully add the coated balls to the hot oil, frying in batches if necessary. Fry until golden brown and cooked through, about 4-5 minutes.

Drain and Serve
Remove the sauerkraut balls from the oil and drain on paper towels. Serve hot with creamy horseradish sauce and mustard.
