    Prepare the Ingredients

    Cut the chuck roast into bite-sized pieces. Chop the onions and carrots, and mince the garlic.

    Sear the Meat

    In a large pot or Dutch oven, heat some oil over medium-high heat. Add the pieces of chuck roast and sear until browned on all sides. Remove the meat and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onions and carrots. Sauté until the onions are translucent, about 5 minutes. Add the minced garlic and paprika, cooking for another minute until fragrant.

    Simmer the Gulasch

    Return the browned meat to the pot. Pour in the red wine and beef broth. Season with salt and black pepper. Bring to a simmer, then reduce heat to low and cover. Let it cook for 2 to 3 hours, or until the meat is tender.

    Serve

    Serve the gulasch hot over potato dumplings, accompanied by red cabbage on the side.
