    Prepare the Dough

    In a large bowl, mix together the flour, water, olive oil, and salt until a smooth dough forms. Knead the dough for about 5 minutes until elastic. Cover and let it rest for 30 minutes.

    Caramelize the Onions

    Slice the onion into thin rings. In a skillet, heat a bit of olive oil over medium heat. Add the onions and cook them slowly, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes.

    Cook the Bacon

    In another skillet, cook the bacon slices until crispy. Once cooked, remove from the pan and chop into small pieces.

    Roll Out the Dough

    Preheat your oven to 475°F (245°C). Roll out the rested dough on a floured surface until very thin, about 1/8 inch thick. Transfer to a baking sheet lined with parchment paper.

    Assemble the Flammkuchen

    Spread the sour cream evenly over the dough. Top with the caramelized onions and chopped bacon. Sprinkle with black pepper.

    Bake in the preheated oven for about 10-12 minutes, or until the edges are crispy and golden.

    Remove from the oven, optionally garnish with chopped chives, slice, and serve hot.
