Cook the Spaghetti
In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.

Prepare the Pancetta
In a large skillet, heat the olive oil over medium heat. Add the pancetta and cook until crispy and golden, about 5-7 minutes. Remove from heat and set aside.

Mix the Egg and Cheese
In a bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of black pepper until well combined.

Combine Ingredients
Add the hot, drained spaghetti to the skillet with pancetta. Quickly pour the egg and cheese mixture over the spaghetti, tossing everything together rapidly to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.

Season and Serve
Taste and adjust seasoning with salt and additional black pepper if needed. Serve immediately, garnished with extra Parmesan cheese and black pepper.
