Cook the Pasta
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta water, then drain the spaghetti.

Cook the Pancetta
While the pasta is cooking, heat a large skillet over medium heat. Add the pancetta and cook until crispy, about 4-5 minutes. Remove from heat and set aside.

Prepare the Sauce
In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined. Ensure the mixture is smooth and creamy.

Combine Everything
Add the drained spaghetti to the skillet with pancetta. Toss to combine. Remove from heat, then quickly pour the egg and cheese mixture over the pasta. Toss rapidly to coat the spaghetti and create a creamy sauce, adding reserved pasta water a little at a time to reach desired consistency.

Serve
Taste and adjust seasoning with salt, if necessary. Serve immediately with extra grated Parmesan and freshly cracked black pepper on top.
