Prepare the Cream Cheese Mixture
In a large mixing bowl, beat the cream cheese until smooth and creamy using an electric mixer at medium speed.

Add Sugar and Sour Cream
Gradually add the granulated sugar and continue mixing until well combined. Then add the sour cream and vanilla extract and mix until smooth.

Incorporate Eggs
Add the eggs one at a time, mixing on low speed until just combined after each addition. Do not overmix.

Add Flour
Sift in the all-purpose flour and gently fold it into the cream cheese mixture until just combined.
Crust

Prepare the Crust
Preheat the oven to 325°F (163°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

Bake the Crust
Bake in the preheated oven for about 10 minutes, then remove and let cool slightly.
Assemble and Bake

Combine Filling and Crust
Pour the cheesecake filling over the cooled crust, spreading it evenly.

Bake in the oven for 55-60 minutes, or until the edges are set and the center is slightly jiggly.

Cool the Cheesecake
Turn off the oven and crack the door open. Allow the cheesecake to cool in the oven for 1 hour before transferring to the refrigerator to chill for at least 4 hours or overnight.

Prepare the Berry Coulis
In a small saucepan over medium heat, combine the mixed berries, granulated sugar, and lemon juice.

Cook the Coulis
Cook, stirring occasionally, until the berries break down and the mixture thickens slightly, about 10-15 minutes.

Blend the Coulis
Remove from heat and let cool slightly. Then, blend the mixture until smooth. Strain through a fine sieve if desired for a smoother texture.
