    Prepare Gelatin

    In a small bowl, sprinkle the gelatin powder over the cold water and let it sit for about 5 minutes to bloom.

    Heat Cream Mixture

    In a saucepan over medium heat, combine the heavy cream, granulated sugar, and vanilla extract. Stir gently until the sugar has dissolved and the mixture is warm, but not boiling (about 5 minutes).

    Incorporate Gelatin

    Remove the saucepan from heat. Add the bloomed gelatin to the warm cream mixture and stir until completely dissolved.

    Chill the Mixture

    Pour the mixture into individual serving cups or ramekins. Cover with plastic wrap and refrigerate for at least 4 hours or until set.

Berry Sauce

    Cook the Berries

    In a small saucepan, combine the mixed berries, granulated sugar, and lemon juice. Cook over medium heat until the berries break down and the mixture thickens slightly (about 10 minutes).

    Strain (Optional)

    If you prefer a smoother sauce, strain the mixture through a fine-mesh sieve to remove the seeds. Let it cool to room temperature.

    Serve

    Once the panna cotta has set, top each serving with the berry sauce just before serving.
