Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Make the Breading Mixture
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper. Mix well.

Soak in Buttermilk
Place the calamari rings in another bowl and pour the buttermilk over them. Allow to soak for at least 30 minutes.

Coat the Calamari
Remove the calamari from the buttermilk and allow excess to drip off. Dredge each piece in the flour mixture until fully coated.

Fry the Calamari
Fry the calamari rings in batches for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

Add Tomatoes and Seasoning
Add the canned crushed tomatoes, dried oregano, salt, black pepper, and sugar to the saucepan. Stir well.

Simmer the Sauce
Bring the sauce to a simmer and cook for about 15-20 minutes, stirring occasionally. Stir in the fresh basil just before serving.
