Calamari Preparation

Clean the Calamari
Begin by cleaning the fresh calamari. Rinse under cold water, remove the beak and innards, and slice the body into rings.

Prepare the Breading
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. In a separate bowl, whisk together the eggs and milk.

Bread the Calamari
Dip each calamari ring into the egg mixture, then coat it in the flour mixture. Shake off any excess flour.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 375°F (190°C).

Fry the Calamari
Carefully add the breaded calamari rings to the hot oil in batches, frying for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

Add Tomatoes and Spices
Add the canned crushed tomatoes, oregano, basil, salt, sugar, black pepper, and red pepper flakes to the saucepan. Stir to combine.

Simmer the Sauce
Reduce the heat to low and let the marinara sauce simmer for about 15-20 minutes, stirring occasionally.
