    Make the Blackening Seasoning

    In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried oregano, dried thyme, black pepper, and salt. Mix well to create the blackening seasoning.

    Prepare the Redfish

    Pat the redfish fillets dry with paper towels. This will help the seasoning stick better.

Cooking

    Season the Fillets

    Rub the blackening seasoning generously over both sides of each redfish fillet.

    Heat the Oil

    In a large skillet, heat the olive oil over medium-high heat until it shimmers but does not smoke.

    Blacken the Fish

    Carefully place the seasoned redfish fillets in the hot skillet. Cook for about 3-4 minutes on each side, or until the fish is cooked through and has a dark, charred crust. The internal temperature should reach 145°F (63°C).

Serving

    Plate the Dish

    Serve the blackened redfish hot, alongside steamed broccoli and rice if desired.
