    Prepare the House Fries

    Peel and dice the potatoes into small cubes. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced potatoes, season with salt and pepper, and cook until golden brown and crispy, about 15-20 minutes. Stir occasionally to ensure even cooking.

    Cook the Bacon

    In another skillet, cook the bacon slices over medium heat until crisp, about 5-7 minutes. Remove from the skillet and place on a paper towel to drain excess grease.

    Fry the Eggs

    In the same skillet used for the bacon, add the remaining tablespoon of olive oil. Crack the eggs into the skillet and cook until the whites are set but the yolks remain runny, about 3-4 minutes. Season with salt and pepper.

    On a plate, layer the house fries, top with crispy bacon, and then place the over-easy eggs on top. Sprinkle shredded cheddar cheese over the eggs and allow it to melt slightly. Serve with ketchup on the side.
