Coconut Lime Rice and Mixed Root Vegetables

Preparation

Cook the Coconut Lime Rice
In a medium saucepan, combine coconut milk, jasmine rice, lime juice, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes or until rice is cooked and liquid is absorbed. Fluff with a fork and set aside.

Prepare Mixed Root Vegetables
In a skillet, heat olive oil over medium heat. Add diced sweet potato, carrot, and red bell pepper. Sauté until vegetables are tender, about 10-15 minutes. Season with salt to taste.

Make the Corn & Black Bean Salsa
In a bowl, combine 1 cup of canned black beans (drained and rinsed), 1 cup of corn (fresh or canned), diced tomatoes, and chopped chives. Mix well and season with lime juice, salt, and pepper to taste.

Prepare Avocado Smash
Mash 2 ripe avocados in a bowl with lime juice, salt, and pepper to taste until creamy but still chunky.

Prepare Cholou Lime Sour Cream
In a small bowl, mix together sour cream, lime juice, and a pinch of salt. Adjust seasoning to taste.

Assemble the Dish
On a plate, layer the coconut lime rice, topped with mixed root vegetables, corn & black bean salsa, avocado smash, and a dollop of cholou lime sour cream. Garnish with additional chives if desired.
