Sticky Toffee Pudding Ingredients

Method

Directions for Sticky Toffee Pudding

  1. 1

    Prepare the Dates

In a bowl, combine the chopped pitted dates and boiling water. Stir in the baking soda and let it sit for about 15 minutes until it softens.

  2. 2

    Make the Cake Batter

Preheat the oven to 180°C (350°F). In a mixing bowl, cream the unsalted butter and brown sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

  3. 3

    Combine Ingredients

Mash the softened date mixture with a fork and add it to the butter and sugar mixture. Gradually fold in the all-purpose flour until just combined.

  4. 4

    Bake the Pudding

Pour the batter into a greased baking dish and bake for 25-30 minutes, or until a skewer inserted into the center comes out clean.

  5. 5

    Prepare the Toffee Sauce

In a saucepan, combine the heavy cream and light brown sugar over medium heat. Stir until the sugar dissolves and the mixture is smooth. Bring to a gentle simmer and cook for 5 minutes until slightly thickened.

  6. 6

    Serve

Once the pudding is baked, let it cool for a few minutes. Cut into squares and serve warm, drizzled with the toffee sauce.
