    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.

    Prepare the Pancetta

    In a large skillet over medium heat, add the pancetta and cook until crispy, about 5-7 minutes. Add minced garlic in the last minute of cooking.

    Make the Sauce

    In a bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of black pepper until well combined.

    Combine Everything

    Add the drained spaghetti to the skillet with pancetta and garlic. Remove from heat. Quickly pour the egg mixture over the pasta, tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time to reach desired consistency.

    Serve

    Taste and adjust seasoning with salt and more black pepper if needed. Serve immediately, garnished with extra Parmesan cheese.
