    Wash and peel the russet potatoes. Cut them into even strips (about 1/4 inch thick) to ensure they cook evenly.

    Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes. This helps to remove excess starch and makes for crispier fries.

    Drain the soaked potatoes and pat them dry with a clean kitchen towel to remove as much moisture as possible.
