    Prepare the Fries

    Wash and peel the Russet potatoes. Cut them into thin strips (about 1/4 inch thick). Soak the potatoes in cold water for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain and pat dry the soaked potatoes. Fry in batches until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels.

    While still hot, season the fries with salt and black pepper to taste.

    Assemble the Dish

    Place a generous portion of crispy fries on a serving plate. Top with pulled pork, cheese curds, and drizzle hot brown gravy over the top. Serve immediately.
