Start by trimming any excess fat from the pork tenderloin. Pat it dry with paper towels and season generously with salt and black pepper on all sides.

In a bowl, mix together the minced garlic, chopped rosemary, and olive oil. Rub this mixture all over the pork tenderloin, ensuring it is well coated. Cover and let it marinate in the refrigerator for at least 30 minutes, preferably 2 hours.

Preheat your oven to 200°C (400°F).

Sear the Pork
In a large oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Once hot, add the marinated pork tenderloin and sear it for about 3-4 minutes on each side until browned.

Once the pork is browned, pour the white wine into the skillet. Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the internal temperature of the pork reaches 63°C (145°F).
