Clean the Mussels
Rinse the fresh mussels under cold water, scrubbing the shells gently to remove any dirt or debris. Remove the beards from the mussels, if present.

Chop Vegetables
Finely chop the onion, garlic, and red bell pepper. Set aside.
Cooking

Sauté the Vegetables
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and diced red bell pepper, cooking for an additional 2-3 minutes until fragrant.

Add Tomatoes and Wine
Stir in the canned diced tomatoes and tomato paste, mixing well. Pour in the white wine and bring the mixture to a simmer. Season with salt, black pepper, and red pepper flakes to taste.

Cook the Mussels
Add the cleaned mussels to the pot, cover, and cook for about 5-7 minutes or until the mussels have opened up. Discard any mussels that do not open.

Finish with Fresh Parsley
Remove the pot from heat and stir in the chopped fresh parsley. Adjust seasoning if necessary.

Serve the mussels in tomato sauce hot, with crusty bread or over pasta if desired. Enjoy!
