Method

Preparing the Base

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

  2. 2

    Combine Wet Ingredients

In a separate bowl, beat the eggs, then mix in the milk and vanilla extract until smooth.

  3. 3

    Combine Mixtures

Pour the wet mixture into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.

Preparing the Fruit Filling

  1. 4

    Prepare the Fruits

In a medium bowl, combine the fresh blueberries and diced strawberries. Add lemon juice and granulated sugar. Gently toss to coat the fruits evenly.

Baking the Soalheiro

  1. 5

    Preheat the Oven

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.

  2. 6

    Layer the Mixture

Pour half of the batter into the prepared cake pan. Then, layer the fruit filling evenly over the batter. Finally, pour the remaining batter on top of the fruit.

  3. 7

    Bake

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

  4. 8

    Cool

Remove from the oven and allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Finishing Touches

  1. 9

    Serve and Garnish

Once cooled, dust the top with powdered sugar and garnish with fresh mint leaves before slicing and serving.
