    Marinate the Pork

    In a bowl, mix olive oil, minced garlic, chopped rosemary, red wine, honey, salt, and black pepper. Add the pork tenderloin and coat evenly. Marinate for at least 1 hour or overnight in the refrigerator.

    Preheat the oven to 400°F (200°C). Heat a skillet over medium-high heat and add a little olive oil. Sear the marinated pork tenderloin on all sides until browned, about 3-4 minutes per side.

    Roast the Pork

    Transfer the seared pork to a baking dish and pour the remaining marinade over it. Roast in the preheated oven for 25-30 minutes, or until the internal temperature reaches 145°F (63°C). Let it rest for 5-10 minutes before slicing.

    Prepare the Potatoes

    In a pot, add the halved baby potatoes and cover with water. Add 1 tsp salt to the water and bring to a boil. Cook for about 15 minutes until tender. Drain and set aside.

    In a skillet, melt the butter over medium heat. Add the trimmed green beans and sauté for 5-7 minutes until they are bright green and tender-crisp. Add lemon zest and season with salt to taste.

    Serve the roasted pork tenderloin alongside the boiled baby potatoes and sautéed green beans for a complete meal.
