Method

Preparation

  1. 1

    Marinate the Chicken

In a large bowl, combine the diced chicken breast, olive oil, honey, minced garlic, oregano, basil, salt, and black pepper. Mix well to ensure the chicken is evenly coated. Cover and let marinate in the refrigerator for at least 30 minutes.

Cooking

  1. 2

    Sauté the Vegetables

Heat a large skillet over medium heat. Add a tablespoon of olive oil and let it heat up. Add the diced bell peppers, sliced zucchini, chopped red onion, and halved cherry tomatoes. Sauté for about 5-7 minutes until the vegetables are tender. Season with salt and pepper to taste, then remove from the skillet and set aside.

  2. 3

    Cook the Chicken

In the same skillet, add another tablespoon of olive oil. Add the marinated chicken along with any remaining marinade. Cook for about 8-10 minutes, stirring occasionally, until the chicken is cooked through and golden brown.

  3. 4

    Combine

Once the chicken is cooked, add the sautéed vegetables back to the skillet with the chicken. Pour in the red wine and bring to a simmer. Let it cook for another 5-10 minutes until the wine reduces slightly and the flavors meld together.

Serving

  1. 5

    Plate and Serve

Serve the Quinta da Lixa hot, garnished with fresh basil or parsley if desired. Enjoy with crusty bread or over a bed of rice.
