Method

Cheese Preparation

  1. 1

    Heat the Milk

In a large pot, pour in the whole milk and heat it over medium heat. Stir occasionally to prevent the milk from scorching until it reaches about 85°C (185°F).

  2. 2

    Add Vinegar

Once the milk is heated, remove it from the heat and gently stir in the white vinegar. Let it sit for about 10-15 minutes until curds form and the whey separates.

  3. 3

    Strain the Curds

Line a colander with cheesecloth or a clean kitchen towel. Pour the curds and whey mixture into the colander to strain the curds from the whey. Allow it to drain for about 15 minutes.

  4. 4

    Add Salt and Cream

Transfer the strained curds into a mixing bowl. Add the salt and heavy cream. Mix gently until the salt is fully dissolved and the mixture is creamy.

  5. 5

    Customize (Optional)

If desired, chop and add fresh herbs and black pepper to the curds mixture. Mix well to incorporate.

  6. 6

    Shape the Cheese

Spoon the cheese mixture into a mold or shape it into a ball. Cover it with plastic wrap and refrigerate for at least 1 hour to firm up.
