Prepare the Ingredients
Begin by dicing the chicken breast into bite-sized pieces. Rinse the quinoa under cold water and set aside. Dice the bell peppers into small pieces and mince the garlic.

Cook the Chicken
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced chicken breast, sprinkle with salt, black pepper, cumin, and paprika. Cook for about 6-8 minutes, or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil and add the minced garlic and diced bell peppers. Sauté for about 4-5 minutes until the bell peppers are tender.

Cook the Quinoa
While the vegetables are sautéing, in a separate pot, combine the rinsed quinoa with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed.

Combine Everything
Once the quinoa is cooked and the bell peppers are tender, add the chicken back into the skillet with the vegetables. Add lemon juice and stir to combine everything well.

Serve the chicken and quinoa mixture on plates. Garnish with chopped fresh parsley and lemon wedges on the side.
