Method

Chourico Assado (Flamed Portuguese Sausage)

    Prepare the Sausage

    Slice the chourico sausage into 1/2 inch thick pieces and place them in a skillet.

    Sauté the Sausage

    Add olive oil and red wine to the skillet and cook over medium heat until the sausage is browned, about 10 minutes.

    Flambé the Sausage

    Carefully ignite the sausage using a long lighter, allowing the flames to burn off the alcohol. Once flames subside, garnish with fresh parsley before serving.

Polvo Ao Alho (Octopus in Garlic Sauce)

    Cook the Octopus

    In a large pot, boil salted water and add the octopus. Cook for about 30-40 minutes until tender. Drain and cut into bite-sized pieces.

    Prepare the Garlic Sauce

    In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant, about 2 minutes.

    Combine Octopus and Sauce

    Add the cooked octopus to the skillet, sprinkle with paprika, and stir to coat. Cook for another 5 minutes and garnish with fresh parsley.

Camarao Ao Alho (Shrimp in Garlic Sauce)

    In a skillet, heat olive oil over medium heat and add minced garlic. Sauté until fragrant, about 1 minute.

    Add the shrimp and red pepper flakes to the skillet. Cook until the shrimp turn pink and opaque, about 5-7 minutes.

Batata Brava (Sautéed Hot Potatoes)

    Prepare the Potatoes

    Heat olive oil in a large skillet over medium heat. Add diced potatoes and season with salt, paprika, and garlic powder.

    Sauté the potatoes until they are golden brown and crispy, about 15-20 minutes, stirring occasionally.

    Once cooked, remove from heat and garnish with fresh parsley. Serve hot.
