Preparation of Octopus

Clean and Prepare Octopus
Rinse the octopus under cold water. Remove the beak and the ink sac if not already done. You can also freeze the octopus for a day to tenderize it if it's fresh.

Boil the Octopus
In a large pot, bring salted water to a boil. Add the octopus and cook it for about 30-40 minutes until tender. You can test tenderness by inserting a knife into the thickest part of the tentacle.

Cool and Cut
Once cooked, remove the octopus from the pot and let it cool. Once cooled, cut it into bite-sized pieces.

Sauté Garlic
In a large skillet, heat the olive oil over medium heat. Add the minced garlic cloves and sauté until fragrant, about 1-2 minutes. Be careful not to burn the garlic.

Season
Add salt, black pepper, and the whole red chili (if using) to the octopus. Stir well and sauté for another 5-7 minutes until everything is heated through.
