Preparation

  1. 1

    Prepare the Ingredients

Cube the pork, beef, and chicken into bite-sized pieces. Slice the Portuguese sausage, chop the onion, bell pepper, and tomato, and mince the garlic. Cube the potatoes.

Cooking

  1. 2

    Sauté the Meats

In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the cubed pork and sauté until browned, about 5-7 minutes. Remove and set aside.

  2. 3

    Continue with Beef and Chicken

In the same skillet, add the cubed beef and chicken. Sauté until browned and cooked through, about 7-10 minutes. Add the sliced Portuguese sausage and cook for an additional 2-3 minutes. Remove the meats from the skillet and set aside.

  3. 4

    Sauté the Vegetables

In the same skillet, add the chopped onion, garlic, and bell pepper. Sauté until softened, about 5 minutes. Add the chopped tomato and cook for an additional 2 minutes.

  4. 5

    Add the Potatoes and Sauce

Stir in the cubed potatoes, then add the chicken broth, tomato paste, paprika, bay leaves, salt, black pepper, and red pepper flakes. Stir to combine.

  5. 6

    Combine Ingredients

Return the sautéed meats to the skillet, mixing well with the sauce and vegetables. Bring to a simmer.

  6. 7

    Cook Until Tender

Cover and reduce heat to low. Let simmer for about 30-40 minutes, stirring occasionally, until the potatoes are tender and flavors meld.

  7. 8

    Finish and Serve

Remove bay leaves before serving. Enjoy your Picadinho A 'PortuCale' hot, garnished with sliced green olives.
