Preparing the Pera-Manca Filling

Prepare the Pears
Peel, core, and chop the ripe pears into small pieces. Measure out 2 cups of chopped pears.

Mix Filling Ingredients
In a medium bowl, combine the chopped pears, sugar, lemon juice, vanilla extract, and cornstarch. Mix well until the pears are fully coated and set aside to let the mixture marinate for about 10 minutes.
Making the Crust

Prepare the Dough
In a large mixing bowl, whisk together the all-purpose flour, powdered sugar, and salt. Cut in the cold unsalted butter with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Add Egg Yolk and Water
Add the egg yolk and ice water to the flour mixture. Stir until the dough begins to come together. If it’s too crumbly, add a little more ice water, one teaspoon at a time.

Chill the Dough
Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Assembling and Baking the Pera-Manca

Preheat the Oven
Preheat your oven to 375°F (190°C).

Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.
