    Begin by gathering all your ingredients. Rinse the rice under cold water until the water runs clear, then soak in water for about 30 minutes before draining.

    Cook Chicken

    In a large, heavy-bottomed pot, heat the olive oil over medium heat. Season the chicken thighs with salt and black pepper. Cook the chicken for about 5-7 minutes on each side, or until golden brown. Remove from the pot and set aside.

    In the same pot, add the diced onion, bell pepper, and minced garlic. Sauté for about 5 minutes, or until the vegetables are softened.

    Stir in the sliced chorizo sausage and cook for an additional 3-4 minutes until the sausage is slightly crispy.
