Preparation

    Prepare the Lobster

    Bring a large pot of salted water to a boil. Add the whole lobster and cook for about 8-10 minutes until bright red. Remove and set aside to cool. Once cooled, remove the meat from the lobster and chop into bite-sized pieces.

    Clean the Seafood

    Rinse the mussels and clams under cold water, scrubbing the shells to remove any debris. Remove the beards from the mussels and discard any that are open or broken.

    Chop Vegetables

    Dice the onion and red bell pepper, and mince the garlic cloves.

Cooking

    Sauté the Vegetables

    In a large paella pan or deep skillet, heat the olive oil over medium heat. Add the diced onion, bell pepper, and minced garlic. Sauté for about 5 minutes until softened.

    Add Rice and Seasoning

    Stir in the short-grain rice, saffron threads, and paprika. Cook for 2-3 minutes to toast the rice slightly.

    Add Broth

    Pour in the chicken or seafood broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.

    Add Seafood

    After 15 minutes, add the lobster meat, mussels, clams, shrimp, and scallops. Season with salt and black pepper to taste. Cover and cook for an additional 10-12 minutes until the seafood is cooked through and the rice has absorbed the liquid.

    Finish with Peas

    Stir in the green peas and cover for another 2-3 minutes until heated through.

Serving

    Serve

    Remove from heat and let the paella rest for 5 minutes. Serve with lemon wedges on the side.
