Cooking the Meat

Prepare the Pork
Preheat your oven to 200°C (400°F). Pat the pork tenderloin dry with paper towels. Season it generously with salt and black pepper.

Sear the Pork
In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the pork tenderloin and sear on all sides until browned, about 2-3 minutes per side.

Roast the Pork
Transfer the skillet to the preheated oven and roast the pork for about 25-30 minutes, or until the internal temperature reaches 65°C (145°F). Remove from the oven and let it rest for 10 minutes before slicing.

Combine Salsa Ingredients
While the meat is roasting, combine the diced pineapple, red onion, chopped cilantro, lime juice, and minced jalapeño in a medium bowl. Mix well and let it sit for at least 10 minutes to allow the flavors to meld.

Plate the Dish
Once the pork has rested, slice it into medallions. Serve on a plate topped with the pineapple salsa. Garnish with lime wedges and additional cilantro leaves as desired.
