Dough

Method

Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, combine warm water (about 110°F) with sugar and yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour and salt. Whisk together until evenly mixed.

  3. 3

    Combine Ingredients

Once the yeast is activated, add it to the flour mixture along with olive oil. Stir until a dough begins to form.

  4. 4

    Knead the Dough

Transfer the dough to a floured surface and knead for about 7-10 minutes until it is smooth and elastic.

  5. 5

    Let Dough Rise

Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.

Filling Preparation

  1. 6

    Sauté Spinach

In a skillet over medium heat, add a drizzle of olive oil and sauté the minced garlic until fragrant. Add the chopped spinach and cook until wilted. Remove from heat and let cool.

  2. 7

    Mix Filling Ingredients

In a mixing bowl, combine the sautéed spinach, feta cheese, ricotta cheese, black pepper, and nutmeg. Mix well until all ingredients are incorporated.

Assembly and Baking

  1. 8

    Roll Out Dough

Once the dough has risen, punch it down and transfer to a floured surface. Roll it out into a large rectangle, about 1/4 inch thick.

  2. 9

    Fill the Dough

Spread the spinach and cheese filling evenly over the rolled-out dough, leaving a small border around the edges.

  3. 10

    Shape the Meandro

Starting from one long edge, roll the dough tightly into a log. Pinch the edges to seal and then shape the log into a spiral (meandro).

  4. 11

    Bake

Preheat the oven to 375°F (190°C). Place the meandro on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden brown.

  5. 12

    Cool and Serve

Remove from the oven and let cool slightly before slicing. Serve warm and enjoy!
