Method

Preparing the Seafood

    Clean the Seafood

    Rinse the lobster, mussels, clams, shrimp, and scallops under cold water. Remove any beards from the mussels and clean the clams thoroughly.

    Cook the Lobster

    In a large pot of boiling salted water, cook the lobster for about 8-10 minutes until bright red. Remove and let cool before cracking the shell and setting aside the meat.

    Prepare the Other Seafood

    In the same pot, add the mussels and clams, cover, and steam for about 5-7 minutes until they open. Discard any that do not open. Add the shrimp and scallops and cook for an additional 3-4 minutes until pink and opaque.

Making the Red Sauce

    Sauté the Aromatics

    In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, cooking until soft and translucent, about 5 minutes.

    Add Vegetables

    Stir in chopped red bell pepper and diced tomatoes, cooking for another 5 minutes until the tomatoes start to break down.

    Season the Sauce

    Sprinkle in paprika and chili flakes, then pour in the fish stock. Bring to a simmer and let cook for about 10 minutes, allowing the flavors to meld. Season with salt and black pepper to taste.

Making the Green Sauce

    Sauté the Aromatics

    In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, cooking until soft and translucent, about 5 minutes.

    Add Vegetables and Herbs

    Stir in chopped green bell pepper, then add the parsley and cilantro. Cook for another 5 minutes, allowing the herbs to wilt.

    Finish the Sauce

    Pour in the fish stock and simmer for about 10 minutes. Season with salt and black pepper to taste.

Combining Everything

    Combine Seafood and Sauce

    In a large serving dish, combine the cooked seafood with either the red or green sauce, gently mixing to coat the seafood evenly.

    Serve

    Serve the mariscada warm with crusty bread or rice on the side for a complete meal.
