Calamari Preparation

    Prepare the Calamari

    In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

    Coat the Calamari

    Dip the cleaned and sliced calamari into the beaten eggs, allowing any excess to drip off. Then, dredge the calamari in the flour mixture until evenly coated.

    Heat the Oil

    In a deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Carefully add a few pieces of the coated calamari to the hot oil, making sure not to overcrowd the pot. Fry for about 2-3 minutes or until golden brown and crispy.

    Drain and Serve

    Remove the fried calamari from the oil using a slotted spoon and transfer to a plate lined with paper towels to drain excess oil. Repeat with remaining calamari.

Marinara Sauce Preparation

    Make the Marinara Sauce

    In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

    Add Tomatoes and Seasonings

    Stir in the crushed tomatoes, dried oregano, sugar, salt, and black pepper. Bring to a simmer and let cook for about 15-20 minutes, stirring occasionally.

    Finish the Sauce

    Once the sauce has thickened slightly, stir in the chopped fresh basil. Remove from heat and set aside.
