Method
Preparation of Base
- 1
Preheat the Oven
Preheat your oven to 350°F (175°C).
- 2
Mix Dry Ingredients
In a large mixing bowl, combine 2 cups of all-purpose flour, 1 cup of granulated sugar, 2 tsp of baking powder, and 1 tsp of salt. Whisk together until well blended.
- 3
Mix Wet Ingredients
In another bowl, whisk together 1 cup of milk, 3 large eggs, 1 cup of vegetable oil, and 1 tsp of vanilla extract until smooth.
- 4
Combine Ingredients
Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Do not overmix; a few lumps are fine.
- 5
Pour into Pan
Grease a 9x13 inch baking pan with oil or cooking spray. Pour the batter into the prepared pan, spreading it evenly.
- 6
Bake
Place the pan in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- 7
Cool
Once baked, remove from the oven and let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Preparation of Topping
- 8
Prepare Berries
While the base is cooling, wash and prepare the fresh berries. If using strawberries, hull and slice them.
- 9
Whip Cream
In a mixing bowl, whip 1 cup of heavy cream until soft peaks form. Add 2 tbsp of powdered sugar and continue to whip until stiff peaks form.
- 10
Assemble
Once the base is completely cool, slice it into squares. Top each square with a generous amount of mixed berries and a dollop of whipped cream.
