Cooking the Rice
1. Rinse the Rice
In a fine mesh strainer, rinse the basmati rice under cold water until the water runs clear to remove excess starch.
2. Cook the Rice
In a large pot, combine the rinsed rice and water. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until all the water is absorbed. Turn off the heat and let it sit, covered, for an additional 10 minutes.
Preparing the Spice Mix
3. Toast the Spices
In a small dry pan over medium heat, add cumin seeds and toast until fragrant, about 2 minutes. Remove from heat and let cool.
4. Mix the Spices
In a bowl, combine the toasted cumin seeds, coriander powder, turmeric powder, garam masala, and salt. Set aside.
Cooking the Vegetables and Protein
5. Sauté the Vegetables
In a large skillet or wok, heat a tablespoon of oil over medium heat. Add sliced onions and sauté until translucent, about 5 minutes. Then add bell pepper, carrot, and green peas, cooking for an additional 5 minutes.
6. Add Tomatoes and Spices
Stir in the chopped tomato and the spice mix. Cook for another 3-4 minutes until the tomatoes soften.
7. Add Protein
If using chicken, add the diced chicken breast and cook until no longer pink, about 7-10 minutes. If using chickpeas or paneer, add them and heat through for about 5 minutes.
