Method

Prepare Seafood

  1. 1

    Clean the Seafood

Rinse the New Zealand mussels and clams under cold water to remove any sand or debris. Scrub the shells with a brush if necessary.

  2. 2

    Prepare Lobster

Boil the lobster in salted water for about 8-10 minutes until cooked. Remove from water, let cool slightly, and then cut in half lengthwise.

  3. 3

    Prepare Shrimp

Peel and devein the shrimp, leaving the tails on for presentation. Set aside.

Stuff Fish Fillets

  1. 4

    Make Stuffing

In a bowl, mix together breadcrumbs, minced garlic, chopped parsley, lemon juice, olive oil, salt, and black pepper until well combined.

  2. 5

    Stuff Fish

Take the fish fillets and carefully stuff them with the prepared mixture. Secure with toothpicks if necessary.

Cook Seafood

  1. 6

    Grill Mussels and Clams

Preheat the grill to medium-high heat. Place the cleaned mussels and clams on the grill and cook for about 5-7 minutes until they open up.

  2. 7

    Grill Scallops

Brush scallops with olive oil, season with salt and pepper, and grill for about 3-4 minutes on each side until golden brown.

  3. 8

    Grill Stuffed Fish Fillets

Place the stuffed fish fillets on the grill and cook for 5-6 minutes on each side, or until the fish is opaque and cooked through.

  4. 9

    Grill Lobster

Grill the lobster halves for about 5 minutes on each side until heated through and slightly charred.

  5. 10

    Cook Shrimp

In a pan, heat olive oil over medium heat. Add minced garlic and red pepper flakes; sauté for 1 minute. Add the shrimp and cook for 3-4 minutes until pink. Add white wine and lemon juice, season with salt and pepper, and cook for another 2 minutes.

Prepare Sides

  1. 11

    Cook Yellow Rice

In a pot, combine yellow rice with water according to package instructions. Cook until fluffy.

  2. 12

    Prepare Spanish Potatoes

Boil Spanish potatoes in salted water until fork-tender, then drain and serve with a drizzle of olive oil.
