Prepare Seafood

Clean the Seafood
Rinse the New Zealand mussels and clams under cold water to remove any sand or debris. Scrub the shells with a brush if necessary.

Prepare Lobster
Boil the lobster in salted water for about 8-10 minutes until cooked. Remove from water, let cool slightly, and then cut in half lengthwise.

Prepare Shrimp
Peel and devein the shrimp, leaving the tails on for presentation. Set aside.

Stuff Fish
Take the fish fillets and carefully stuff them with the prepared mixture. Secure with toothpicks if necessary.

Grill Stuffed Fish Fillets
Place the stuffed fish fillets on the grill and cook for 5-6 minutes on each side, or until the fish is opaque and cooked through.

Grill Lobster
Grill the lobster halves for about 5 minutes on each side until heated through and slightly charred.

Cook Shrimp
In a pan, heat olive oil over medium heat. Add minced garlic and red pepper flakes; sauté for 1 minute. Add the shrimp and cook for 3-4 minutes until pink. Add white wine and lemon juice, season with salt and pepper, and cook for another 2 minutes.
