    Start by trimming any excess fat from the pork tenderloin and cut it into 1-inch medallions.

    Finely chop the garlic, onion, and bell peppers.

Cooking

    In a large skillet, heat olive oil over medium-high heat. Add the pork medallions and sear them for about 3-4 minutes on each side until golden brown. Remove from the skillet and set aside.
