Method

Preparation of Marinade

    Prepare the Marinade

    In a small bowl, mix together olive oil, minced garlic, chopped fresh rosemary, salt, and black pepper.

    Marinate the Steak

    Rub the marinade all over the Angus Porterhouse steak and let it marinate for at least 1 hour at room temperature or refrigerate for up to 24 hours.

Cooking Spanish Potatoes

    Prepare the Potatoes

    Preheat the oven to 425°F (220°C). Halve the baby potatoes and place them in a bowl.

    Season and Roast

    Drizzle the potatoes with olive oil, smoked paprika, garlic powder, and salt. Toss to combine, then spread them on a baking sheet. Roast in the oven for 20-25 minutes, or until golden and tender.

Cooking Asparagus

    Prepare the Asparagus

    While the potatoes are roasting, prepare the asparagus. Trim the tough ends and rinse under cold water.

    Toss the asparagus with olive oil, salt, and lemon juice. Grill on medium-high heat for about 5-7 minutes, until tender and slightly charred.

Grilling the Steak

    Preheat your grill to high heat. If using charcoal, let the coals burn down until they are covered with ash.

    Place the marinated Angus Porterhouse steak on the grill and cook for about 4-5 minutes on each side for medium-rare, adjusting time based on your desired doneness.
