    Slice the Sausage

    Start by slicing the chourico sausage into 1/4-inch thick rounds. This will allow it to cook evenly and render its flavor.

    Mince the Garlic

    Peel and mince the garlic cloves finely. Set aside.

    Chop the Onion and Bell Pepper

    Peel the onion and chop it into small pieces. Wash the bell pepper, remove the seeds, and chop into small cubes.

Cooking

    Heat the Olive Oil

    In a large skillet, heat the olive oil over medium heat until it shimmers.

    Sauté the Sausage

    Add the sliced chourico sausage to the skillet and sauté for about 5-7 minutes, or until browned and cooked through.

    Add the Aromatics

    Add the minced garlic, chopped onion, and bell pepper to the skillet. Stir and cook for an additional 4-5 minutes until the vegetables are softened.
