Cooking the Pork and Clams

Sauté the Pork
In a large skillet, heat the olive oil over medium-high heat. Add the cubed pork shoulder and season with salt and black pepper. Cook until browned on all sides, about 8-10 minutes.

Add Aromatics
Add the minced garlic, chopped onion, and red bell pepper to the skillet with the pork. Sauté for another 5-7 minutes, or until the vegetables are soft and fragrant.

Add Wine and Paprika
Stir in the paprika and pour in the white wine. Bring to a simmer, scraping any browned bits from the bottom of the skillet. Let it cook for 5 minutes to reduce slightly.

Incorporate Clams
Add the cleaned clams to the skillet. Cover with a lid and cook for another 5-7 minutes, or until the clams have opened. Discard any clams that do not open.

Finish with Cilantro
Once the clams are open, stir in the chopped cilantro. Check for seasoning and adjust with more salt or pepper if necessary.
