For the Pork and Clams

For the Potatoes

Method

Preparing the Potatoes

  1. 1

    Boil the Potatoes

In a large pot, combine the cubed potatoes, bay leaves, salt, and water. Bring to a boil over medium heat, then reduce to a simmer. Cook for about 15-20 minutes or until the potatoes are fork-tender. Drain and set aside.

Cooking the Pork and Clams

  1. 2

    Sauté the Pork

In a large skillet, heat the olive oil over medium-high heat. Add the cubed pork shoulder and season with salt and black pepper. Cook until browned on all sides, about 8-10 minutes.

  2. 3

    Add Aromatics

Add the minced garlic, chopped onion, and red bell pepper to the skillet with the pork. Sauté for another 5-7 minutes, or until the vegetables are soft and fragrant.

  3. 4

    Add Wine and Paprika

Stir in the paprika and pour in the white wine. Bring to a simmer, scraping any browned bits from the bottom of the skillet. Let it cook for 5 minutes to reduce slightly.

  4. 5

    Incorporate Clams

Add the cleaned clams to the skillet. Cover with a lid and cook for another 5-7 minutes, or until the clams have opened. Discard any clams that do not open.

  5. 6

    Finish with Cilantro

Once the clams are open, stir in the chopped cilantro. Check for seasoning and adjust with more salt or pepper if necessary.

Serving

  1. 7

    Combine and Serve

Serve the sautéed pork and clams over the boiled potatoes. Garnish with additional cilantro if desired.
