Preparation of Spanish Potatoes

    Fry the Potatoes

    In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add the diced potatoes and season with salt and paprika. Cook, stirring occasionally, until the potatoes are golden brown and tender, about 15-20 minutes.

Preparation of Sauce

    Make the Sauce

    In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent. Stir in the tomato sauce, red wine, paprika, and bay leaves. Bring to a simmer and let cook for about 15 minutes, stirring occasionally. Add chopped parsley at the end and adjust seasoning with salt and pepper to taste.

Grilling the Steak

    Prepare and Grill the Steak

    Season the Angus shell steak with salt and black pepper. Preheat the grill to medium-high heat. Brush the grill with a little olive oil to prevent sticking. Grill the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. In the last minute of grilling, add the slices of ham on top of the steak to heat through.

Frying the Eggs

    Fry the Eggs

    In a small skillet, heat a teaspoon of olive oil over medium heat. Crack the eggs into the skillet and fry until the whites are set and the yolks are still runny, or cooked to your preference.

Assembly

    Assemble the Dish

    On a plate, serve the grilled steak topped with the ham, then place a fried egg on top. Spoon the Portuguese sauce over the steak. Serve with the Spanish potatoes on the side.
