Flatbread Preparation
1. Prepare the Dough
In a small bowl, dissolve the active dry yeast in warm water. Let it sit for about 5 minutes until frothy. In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
2. Knead the Dough
Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
3. Prepare Cherry Tomatoes
While the dough is rising, preheat your oven to 400°F (200°C). Toss the cherry tomatoes with olive oil, salt, and pepper in a baking dish. Roast in the oven for about 20 minutes until they burst and caramelize.
4. Shape the Flatbread
Once the dough has risen, punch it down and divide it into 2 equal portions. Roll each portion into a flat circle about 1/4 inch thick.
5. Bake the Flatbread
Preheat a wood-fired oven or traditional oven to high heat. Place the flatbreads on a baking stone or baking sheet and bake for about 8-10 minutes until golden and bubbly.
6. Assemble the Flatbread
Remove the flatbreads from the oven. Top each flatbread with roasted cherry tomatoes, slices of fresh mozzarella, and drizzle with basil pesto oil. Return to the oven for an additional 2-3 minutes until the cheese is melted.
7. Serve
Slice and serve warm, garnished with fresh basil leaves.
