Prepare the Pulled Pork
Rub the pork shoulder with salt, black pepper, smoked paprika, garlic powder, and onion powder. Place it in a smoker at 225°F (107°C) for about 6-8 hours, or until it reaches an internal temperature of 195°F (90°C).

Make the Mango BBQ Sauce
In a saucepan, combine diced mango, ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, chili powder, salt, and black pepper. Simmer on low heat for about 15-20 minutes until thickened.

Prepare Bread & Butter Pickles
In a large bowl, combine sliced cucumbers, sugar, apple cider vinegar, onion, and salt. Let sit for at least 2 hours, preferably overnight, in the refrigerator.

Make Buttermilk Red Onions
In a bowl, mix the buttermilk, salt, and pepper together. Add the thinly sliced red onion and let it marinate for at least 30 minutes.

Assemble the Dish
Shred the pulled pork and mix it with the mango BBQ sauce. Serve on grilled brioche buns topped with buttermilk red onions and bread & butter pickles.
